Main Ingredients
  • 1 1 /2 cups all-purpose flour
  • 1/2 cup cold unsalted butter cut into small pieces
  • 1/4 cup ice-cold water
  • 1/2 cup grated Gruyere cheese
  • 1/2 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup fresh asparagus trimmed
  • 2 large eggs
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1 large egg beaten
  • 1 tbsp water
  • 1/4 cup chopped fresh chives

Method

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to a thickness of about 1/8 inch.
  3. Spread the grated Gruyere cheese evenly over the center of the pastry, leaving a 1-inch border around the edges.
  4. Arrange the asparagus spears on top of the cheese, in a single layer, leaving some space between each spear.
  5. Fold the edges of the pastry up over the asparagus, pressing gently to seal.
  6. Brush the pastry with a little bit of water and sprinkle with additional Gruyere cheese.
  7. Bake for 25-30 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
  8. Remove the tart from the oven and let it cool for a few minutes before slicing and serving.
