Asparagus Frittata with Feta and Green Onions

  • 6 large eggs
  • 1 cup (120g) diced fresh asparagus
  • 1/2 cup (115g) crumbled feta cheese
  • 1/4 cup (15g) chopped green onions
  • 1/2 tsp (2g) salt
  • 1/4 tsp (1g) black pepper
  • 2 tbsp (30ml) olive oil

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Chop green onions and set aside.
  3. Trim asparagus to uniform lengths.
  4. Sauté asparagus in a skillet with a small amount of oil until tender, about 3-4 minutes.
  5. Whisk eggs in a bowl and season with salt.
  6. Pour eggs over asparagus in the skillet and cook until edges start to set, about 2 minutes.
  7. Sprinkle feta cheese over the eggs.
  8. Transfer skillet to the preheated oven and bake until eggs are almost set, about 10-12 minutes.
  9. Remove from oven and sprinkle chopped green onions on top.
  10. Return to oven and bake for an additional 1-2 minutes, until eggs are fully set and green onions are slightly wilted.
  11. Remove from oven and let cool for a few minutes before slicing and serving.
