  • 4 ears of corn husked and silked
  • 1/4 cup mayonnaise
  • 1/4 cup Mexican crema
  • 1/2 cup grated cotija cheese
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp lime juice
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp unsalted butter melted
  • 1/4 cup chopped fresh epazote (optional)
  • 2 tbsp ancho chile powder
  • 1 tbsp guajillo chile powder
  • 1/2 cup unsalted butter softened
  • 1 tbsp freshly squeezed lime juice
  • 1/4 cup grated cotija cheese
  • 1/2 tsp salt

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Husk corn, removing husks and silk, then rinse under cold water.
  3. Pat corn dry with paper towels to remove excess moisture.
  4. Brush corn with oil, ensuring even coverage.
  5. Season corn with salt and pepper to taste.
  6. Roast corn in the oven for 20-25 minutes, turning every 5 minutes, until lightly charred.
  7. Slather mayonnaise or Mexican crema onto roasted corn, if using.
  8. Sprinkle cotija cheese, chili powder, or other desired toppings over the corn.
  9. Serve immediately, with lime wedges on the side for squeezing over the corn.
  10. Garnish with cilantro, if desired, and enjoy.
