Avocado Deviled Eggs

A twist on traditional deviled eggs with the added creaminess of avocado

Ingredients
  

Main Ingredients
  • 6 large eggs hard-boiled and peeled
  • 1/2 ripe avocado mashed
  • 1 tsp Dijon mustard
  • 1/2 tsp prepared horseradish
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp mayonnaise
  • 1 tbsp chopped fresh chives
  • 1 tsp lemon juice

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Place eggs in a single layer in a saucepan and add enough cold water to cover them.
  3. Bring the water to a boil, then cover the saucepan and remove from heat.
  4. Let the eggs sit for 12-15 minutes, then rinse with cold water.
  5. Peel the eggs and cut them in half lengthwise.
  6. Scoop out the yolks and place them in a bowl.
  7. Mash the yolks with a fork until they're well broken up.
  8. Add the avocado and mash until smooth and creamy.
  9. Season with salt and pepper to taste.
  10. Spoon the yolk mixture back into the egg white halves.
  11. Sprinkle with paprika, if desired.
  12. Chill in the refrigerator for at least 30 minutes before serving.
