Avocado Toast with Poached Egg

Ingredients
  

Main Ingredients
  • 4 slices of bread
  • 2 ripe avocados
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1 tbsp lemon juice
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup fresh basil leaves chopped
  • 1 tbsp olive oil

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Toast bread for 10-12 minutes, or until golden brown.
  3. Mash avocado in a bowl until smooth.
  4. Spread mashed avocado onto toasted bread.
  5. Poach egg in boiling water for 3-4 minutes, or until the whites are set and the yolks are cooked to desired doneness.
  6. Place poached egg on top of avocado toast.
  7. Season with salt and pepper to taste.
  8. Serve immediately and garnish with optional ingredients if desired.
