  • 4 slices of bread
  • 2 ripe avocados
  • 1/2 cup extra-virgin olive oil
  • 1 cup fresh baby peas
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup fresh basil leaves chopped
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup chopped fresh chives (optional)

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Toast bread until golden brown, about 10-12 minutes.
  3. Mash avocado in a bowl with a fork until mostly smooth.
  4. Spread mashed avocado on toasted bread.
  5. Slice radishes into thin rounds.
  6. Top toasted bread with sliced radishes, baby peas, and fresh herbs.
  7. Season with salt and pepper to taste.
  8. Drizzle with olive oil, if desired.
  9. Serve immediately and enjoy.
