Baked Lemon Cod

A simple and flavorful cod recipe with a lemon butter sauce.

  • 4 cod fillets (6 oz each)
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs
  • 1/2 cup unsalted butter softened
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp grated lemon zest
  • 1 tsp chopped fresh parsley

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Season the cod fillets with salt and pepper.
  3. Drizzle lemon juice over the cod fillets.
  4. Place the cod fillets on a baking sheet lined with parchment paper.
  5. Bake for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.
  6. Check for doneness by inserting a fork or knife, which should slide in easily.
  7. Remove the cod from the oven and let it rest for 2-3 minutes.
  8. Serve the baked cod hot, garnished with lemon wedges if desired.
