  • 1 lb sweet Italian sausage
  • 2 large bell peppers (any color) sliced
  • 1 large onion sliced
  • 4 cloves of garlic minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese (optional)

Method
 

Instructions
  1. Preheat oven to 425°F (220°C).
  2. Slice the sausage into 1-inch pieces and place on a sheet pan.
  3. Add the peppers to the sheet pan with the sausage.
  4. Drizzle with oil and season with salt and pepper.
  5. Toss to combine, ensuring the sausage and peppers are evenly coated.
  6. Bake for 25-30 minutes, or until the sausage is browned and the peppers are tender.
  7. Remove from the oven and let rest for 5 minutes before serving.
  8. Serve hot, garnished with fresh herbs if desired.
