- Preheat oven to 375°F (190°C).
- Rinse rice in a fine-mesh strainer until water runs clear.
- Heat oil in a medium saucepan over medium heat.
- Add rice to the saucepan and cook until lightly toasted, about 2-3 minutes.
- Stir in water and bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes or until water is absorbed.
- Fluff rice with a fork and stir in chopped cilantro and lime juice.
- Season with salt to taste.
- Serve hot.
