Hearty slow-cooked chili with ground beef and beans

Ingredients
  

Main Ingredients
  • 1 lb ground beef
  • 1 large onion diced
  • 3 cloves of garlic minced
  • 2 medium bell peppers diced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) red kidney beans drained and rinsed
  • 1 can (16 oz) pinto beans drained and rinsed
  • 1 cup beef broth
  • 1/4 cup water
  • 2 tbsp tomato paste
  • 1/4 cup chopped fresh cilantro (optional)

Method
 

Instructions
  1. Preheat the slow cooker to low heat, approximately 275°F (135°C), for at least 30 minutes before cooking
  2. Brown the ground beef in a skillet over medium-high heat, breaking it up into small pieces, until it is fully cooked and no longer pink, about 5-7 minutes
  3. Drain the excess fat from the browned ground beef and transfer it to the slow cooker
  4. Add the remaining ingredients to the slow cooker, stirring to combine
  5. Cook on low for 6-8 hours or on high for 3-4 hours, until the flavors have melded together and the chili has reached the desired consistency
  6. Season the chili with salt and pepper to taste, about 30 minutes before serving
  7. Simmer the chili for an additional 30 minutes, allowing the flavors to meld together
  8. Serve the chili hot, garnished with desired toppings
