  • 1/2 cup unsalted butter softened
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup chopped walnuts
  • 1 tsp vanilla extract
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Method

  1. Preheat oven to 350°F (175°C)
  2. Mix flour, sugar, baking powder, and salt in a large bowl until well combined
  3. Add grated carrots, chopped walnuts, and raisins to the dry ingredients and stir until they are evenly distributed
  4. Whisk eggs, oil, and vanilla extract in a separate bowl until smooth
  5. Combine the wet ingredients with the dry ingredients and mix until just combined, being careful not to overmix
  6. Pour the batter into a greased 9x5-inch loaf pan and smooth the top
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean
  8. Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely
  9. Beat cream cheese and butter in a large bowl until smooth and creamy
  10. Add powdered sugar to the cream cheese mixture and beat until smooth and creamy, adding vanilla extract if desired
  11. Spread the cream cheese frosting
