- Preheat oven to 350°F (175°C)
- Mix flour, sugar, baking powder, and salt in a large bowl until well combined
- Add grated carrots, chopped walnuts, and raisins to the dry ingredients and stir until they are evenly distributed
- Whisk eggs, oil, and vanilla extract in a separate bowl until smooth
- Combine the wet ingredients with the dry ingredients and mix until just combined, being careful not to overmix
- Pour the batter into a greased 9x5-inch loaf pan and smooth the top
- Bake for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean
- Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely
- Beat cream cheese and butter in a large bowl until smooth and creamy
- Add powdered sugar to the cream cheese mixture and beat until smooth and creamy, adding vanilla extract if desired
- Spread the cream cheese frosting
