Carrot Cake with Cream Cheese Frosting

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter softened
  • 1 3 /4 cups granulated sugar
  • 4 large eggs at room temperature
  • 2 cups grated carrots
  • 1 cup chopped walnuts
  • 1 tsp vanilla extract
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 1 1 /2 cups powdered sugar
  • 1 tsp vanilla extract

Method
 

Instructions
  1. Preheat oven to 350°F (180°C).
  2. Mix flour, baking powder, baking soda, salt, and sugar in a large bowl until well combined.
  3. Add grated carrots, chopped walnuts, and eggs to the bowl, mixing until a smooth batter forms.
  4. Pour the batter into two 9-inch (23cm) round cake pans and smooth the tops.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the edges are lightly golden brown.
  6. Remove the cakes from the oven and let them cool in the pans for 10 minutes.
  7. Transfer the cakes to a wire rack to cool completely.
  8. Beat cream cheese and butter in a large bowl until smooth and creamy.
  9. Add vanilla extract and powdered sugar to the bowl, beating until well combined and smooth.
  10. Assemble the cake by placing one cake layer on a serving plate and spreading a layer of cream cheese frosting on top.
  11. Place the second cake layer on top and frost the entire cake with cream cheese frosting.
