- Preheat oven to 350°F (180°C).
- Mix flour, baking powder, baking soda, salt, and sugar in a large bowl until well combined.
- Add grated carrots, chopped walnuts, and eggs to the bowl, mixing until a smooth batter forms.
- Pour the batter into two 9-inch (23cm) round cake pans and smooth the tops.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the edges are lightly golden brown.
- Remove the cakes from the oven and let them cool in the pans for 10 minutes.
- Transfer the cakes to a wire rack to cool completely.
- Beat cream cheese and butter in a large bowl until smooth and creamy.
- Add vanilla extract and powdered sugar to the bowl, beating until well combined and smooth.
- Assemble the cake by placing one cake layer on a serving plate and spreading a layer of cream cheese frosting on top.
- Place the second cake layer on top and frost the entire cake with cream cheese frosting.
