Cheesy Scalloped Potatoes

  • 3 -4 large potatoes thinly sliced
  • 1/4 cup unsalted butter softened
  • 1/2 cup all-purpose flour
  • 2 cups grated cheddar cheese
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped fresh chives
  • 1/4 cup grated parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 2 tbsp unsalted butter melted

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Peel the potatoes and slice them into 1/8-inch thick rounds.
  3. Layer half of the potato slices in a 9x13-inch baking dish.
  4. Sprinkle with salt and pepper to taste.
  5. Top with half of the cheese.
  6. Repeat the layers, starting with the remaining potato slices.
  7. Sprinkle with salt and pepper to taste.
  8. Top with the remaining cheese.
  9. Bake for 45 minutes, or until the potatoes are tender and the top is golden brown.
  10. Remove from the oven and let cool for 10 minutes before serving.
