Cinnamon Roll Muffins

  • 2 1 /4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1 large egg
  • 1/2 cup plain Greek yogurt
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup cold unsalted butter cut into small pieces
  • 1 tsp ground cinnamon
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/4 tsp vanilla extract

Method
 

Instructions
  1. Preheat oven to 375°F (190°C)
  2. Mix flour, sugar, and cinnamon in a large bowl until well combined
  3. Add milk, eggs, and melted butter to the dry ingredients and stir until a smooth batter forms
  4. Pour the batter into a greased muffin tin, filling each cup about 2/3 full
  5. Sprinkle a mixture of cinnamon and sugar on top of each muffin
  6. Bake for 18-20 minutes, or until the muffins are golden brown
  7. Remove the muffins from the oven and let them cool in the tin for 5 minutes
  8. Transfer the muffins to a wire rack to cool completely
  9. Drizzle with a glaze made from powdered sugar and milk, if desired
  10. Serve warm and enjoy
