Classic Baked Macaroni and Cheese

A creamy, cheesy macaroni bake.

  • 250 g macaroni
  • 60 g all-purpose flour
  • 50 g butter
  • 500 ml milk
  • 250 g grated cheddar cheese
  • 125 g grated mozzarella cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Cook macaroni according to package instructions until al dente, then set aside.
  3. Melt butter in a saucepan over medium heat.
  4. Whisk in flour to make a roux, cooking for 1-2 minutes until lightly golden.
  5. Slowly pour in milk, whisking continuously to avoid lumps.
  6. Bring mixture to a simmer and cook until it thickens, stirring occasionally.
  7. Remove sauce from heat and stir in cheddar cheese until melted and smooth.
  8. Combine cooked macaroni and cheese sauce in a baking dish.
  9. Top with additional grated cheese.
  10. Bake for 25-30 minutes, or until golden brown and bubbly.
