Copycat Recipe: Olive Garden's Zuppa Toscana Soup

  • 1 lb Italian sausage
  • 4 -5 slices of bacon
  • 1 large onion (chopped)
  • 3 cloves of garlic (minced)
  • 2 medium potatoes (diced)
  • 1 cup of chicken broth
  • 1/2 cup of heavy cream
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 2 cups of kale (chopped)
  • 2 tbsp olive oil

Method
 

Instructions
  1. Preheat oven to 300°F (150°C).
  2. Sauté Italian sausage in a large pot over medium-high heat, breaking it up with a spoon, until browned, about 5-7 minutes.
  3. Add onions and garlic to the pot and cook until the onions are translucent, about 3-4 minutes.
  4. Add potatoes, chicken broth, and water to the pot, and bring to a boil.
  5. Reduce heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender.
  6. Stir in heavy cream and cook for an additional 2-3 minutes, or until heated through.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped kale or spinach, if desired.
