- Preheat oven to 300°F (150°C).
- Sauté Italian sausage in a large pot over medium-high heat, breaking it up with a spoon, until browned, about 5-7 minutes.
- Add onions and garlic to the pot and cook until the onions are translucent, about 3-4 minutes.
- Add potatoes, chicken broth, and water to the pot, and bring to a boil.
- Reduce heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in heavy cream and cook for an additional 2-3 minutes, or until heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped kale or spinach, if desired.
