Crispy Parmesan Artichoke Hearts

  • 1 can (14 oz) artichoke hearts drained and rinsed
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (Panko works well for extra crunch)
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil spray (or a drizzle of olive oil)

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Combine the ½ cup grated Parmesan cheese, ½ cup breadcrumbs, 2 cloves minced garlic, 1 tsp dried oregano, salt, and pepper (to taste) in a shallow bowl.
  3. Dip each drained and rinsed artichoke heart into the 1 beaten egg, ensuring it's fully coated.
  4. Transfer the egg-dipped artichoke heart into the Parmesan mixture, tossing gently to coat completely. Place the coated artichoke hearts onto the prepared baking sheet, leaving some space between them.
  5. Spray the coated artichoke hearts lightly with olive oil spray (or drizzle with a small amount of olive oil) for extra crispiness.
  6. Bake in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy.
  7. Remove from the oven and let cool slightly before serving.
