Cucumber Mint Tea Sandwiches

A refreshing and light tea sandwich recipe

Ingredients
  

Main Ingredients
  • 2 large cucumbers (240g)
  • 1/4 cup fresh mint leaves (15g)
  • 1/2 cup unsalted butter (115g) softened
  • 1/2 cup cream cheese (115g) softened
  • 1 tsp vanilla extract (5ml)
  • 1/2 tsp salt (2g)
  • 1/4 tsp black pepper (1g)
  • 4 cups white bread (120g) thinly sliced
  • 1/4 cup chopped fresh chives (15g)

Method
 

Instructions
  1. Preheat oven to 300°F (150°C) for toasting bread.
  2. Slice the bread into thin rounds, about 1/4 inch thick.
  3. Butter each bread round lightly on one side.
  4. Toast the bread rounds in the oven for 5 minutes, until lightly browned.
  5. Spread a small amount of cream cheese on each toasted bread round.
  6. Top the cream cheese with a slice of cucumber and a few leaves of mint.
  7. Season with salt to taste.
  8. Assemble the sandwiches by placing another toasted bread round, buttered side up, on top of the filling.
  9. Cut the sandwiches into quarters or halves, depending on desired size.
  10. Serve immediately, garnished with additional mint leaves if desired.
