- Preheat oven to 300°F (150°C) for toasting bread.
- Slice the bread into thin rounds, about 1/4 inch thick.
- Butter each bread round lightly on one side.
- Toast the bread rounds in the oven for 5 minutes, until lightly browned.
- Spread a small amount of cream cheese on each toasted bread round.
- Top the cream cheese with a slice of cucumber and a few leaves of mint.
- Season with salt to taste.
- Assemble the sandwiches by placing another toasted bread round, buttered side up, on top of the filling.
- Cut the sandwiches into quarters or halves, depending on desired size.
- Serve immediately, garnished with additional mint leaves if desired.
