  • 4 Coho salmon steaks (6 oz each)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp lemon zest
  • 2 lemons (juiced 2 tbsp)
  • 1 cup white wine
  • 1 cup fish stock
  • 2 tbsp butter
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh dill

Method
 

Instructions
  1. Preheat oven to 400°F (200°C) for a later finishing step, if necessary, while focusing on pan-searing.
  2. Season the Coho Salmon Steaks with salt and pepper on both sides to enhance the flavor.
  3. Heat a skillet over medium-high heat until it reaches 425°F (220°C) for an ideal sear.
  4. Add a small amount of oil to the preheated skillet and let it heat up for about 1 minute.
  5. Place the Coho Salmon Steaks in the skillet, skin side up if they have skin, and sear for 3-4 minutes on the first side, until a nice crust forms.
  6. Flip the salmon steaks over and cook for an additional 3-4 minutes, until they are cooked through and flake easily with a fork.
  7. Finish with a squeeze of lemon juice and a sprinkle of chopped fresh herbs, if desired, for added flavor and presentation.
  8. Serve immediately, garnished with additional lemon wedges and herbs, if desired, to complete the romantic dinner setup.
