- Preheat oven to 200°F (90°C) for warming.
- Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat.
- Sauté until the oil is shimmering, then add aromatics and stir for 1-2 minutes until fragrant.
- Add protein and cook until pink and fully cooked, about 2-3 minutes per side.
- Push the protein and aromatics to one side of the pan, then add more oil if necessary.
- Scramble in eggs and cook until they are set, breaking them up into small pieces as they cook.
- Mix everything together, then add cooked rice to the pan, stirring and tossing to combine and heat through.
- Season with salt and pepper to taste, then transfer to a serving platter.
