Easy Strawberry Shortcake Recipe

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup heavy cream
  • 2 large eggs
  • 2 cups sliced strawberries
  • 1 cup confectioners' sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 tbsp granulated sugar
  • 3 cups sliced strawberries
  • 2 tbsp granulated sugar

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Mix flour, sugar, and baking powder in a large bowl.
  3. Add cold butter and use a pastry blender or fingers to work it into the dry ingredients until the mixture resembles coarse crumbs.
  4. Pour in heavy cream and stir until the dough comes together in a shaggy mass.
  5. Turn the dough out onto a floured surface and knead it a few times until it comes together.
  6. Roll the dough out to about 1 inch (2.5 cm) thickness and cut out rounds using a biscuit cutter.
  7. Place the rounds on a baking sheet lined with parchment paper and bake for 18-20 minutes, or until golden brown.
  8. Split the shortcakes in half horizontally using a serrated knife.
  9. Spoon sliced strawberries over the bottom half of each shortcake.
  10. Top with the top half of the shortcake and serve immediately.
