Easy Taco Cups

A creative twist on traditional tacos, served in crispy corn tortilla cups.

Ingredients
  

Main Ingredients
  • 1 lb ground beef or turkey
  • 1 packet of taco seasoning
  • Street taco size corn tortillas
  • 1 cup lettuce shredded
  • 1 cup cheese shredded
  • 1 cup cilantro chopped fine
  • 1 cup sour cream

Method
 

Instructions
  1. Preheat oven to 400 degrees.
  2. Warm tortillas for about 15 seconds in a damp paper towel in the microwave.
  3. Place a tortilla over each muffin section of an upside-down muffin tin, then cover with another muffin tin to shape the tortillas during baking.
  4. Bake the tortillas for 10-15 minutes or until golden brown, then remove from muffin tin and set aside.
  5. Mix together sour cream, cilantro, and the juice of one lime quarter in a small bowl, then set aside.
  6. Prepare the ground meat with the taco seasoning per package instructions.
  7. Layer the meat, lettuce, tomato, sour cream mixture, and cheese in the baked tortilla cups.
  8. Serve and enjoy.
