Elote Mexican Street Corn

Ingredients
  

Main Ingredients
  • ¼ cup Crema
  • Chili Powder
  • 1 cup Cojita Cheese
  • ¼ cup Dukes Mayonnaise
  • ¼ cup chopped Cilantro
  • 4 ears of Corn in the husk

Method
 

Instructions
  1. Make the Mexican Corn Sauce by mixing together Dukes Mayonnaise, Crema, and the juice from ½ a Lime
  2. Chop up the Cilantro and squeeze ½ Lime and mix thoroughly
  3. Pour the Cotija Cheese in a separate bowl
  4. Preheat the grill to 300°F (149°C)
  5. Wrap the husked corn in aluminum foil and cook for 45 minutes on indirect heat
  6. Remove from the grill, shuck, and apply the Mexican Corn sauce
  7. Dust the Cotija Cheese onto the Mexican Corn Sauce on the corn
  8. Apply a light coat of chili powder for color
  9. Add the Cilantro last (if desired)
  10. Slice and enjoy
