- Make the Mexican Corn Sauce by mixing together Dukes Mayonnaise, Crema, and the juice from ½ a Lime
- Chop up the Cilantro and squeeze ½ Lime and mix thoroughly
- Pour the Cotija Cheese in a separate bowl
- Preheat the grill to 300°F (149°C)
- Wrap the husked corn in aluminum foil and cook for 45 minutes on indirect heat
- Remove from the grill, shuck, and apply the Mexican Corn sauce
- Dust the Cotija Cheese onto the Mexican Corn Sauce on the corn
- Apply a light coat of chili powder for color
- Add the Cilantro last (if desired)
- Slice and enjoy
