French Onion Soup

A classic French soup made with caramelized onions, beef broth, and topped with toasted bread and melted Gruyère cheese.

  • 3 large onions (450g)
  • 2 tbsp (30g) butter
  • 1 tsp (5g) salt
  • 1/2 tsp (2g) black pepper
  • 4 cups (1L) beef broth
  • 2 cups (475ml) grated Gruyère cheese
  • 4 slices (120g) baguette
  • 2 tbsp (30g) dry white wine (optional)
  • 1/2 cup (60g) grated Gruyère cheese
  • 1/4 cup (30g) chopped fresh parsley

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Caramelize onions in a pan over medium-low heat for 20-25 minutes, stirring occasionally, until they are dark golden brown.
  3. Add beef broth to the pan and bring to a boil, then reduce heat and let simmer for 10 minutes.
  4. Butter slices of bread and toast until golden brown.
  5. Assemble the soup by placing toasted bread slices in the bottom of a bowl, ladling the onion soup over the bread, and topping with grated cheese.
  6. Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
  7. Serve hot, garnished with fresh thyme or parsley if desired.
