- Preheat oven to 400°F (200°C).
- Caramelize onions in a pan over medium-low heat for 20-25 minutes, stirring occasionally, until they are dark golden brown.
- Add beef broth to the pan and bring to a boil, then reduce heat and let simmer for 10 minutes.
- Butter slices of bread and toast until golden brown.
- Assemble the soup by placing toasted bread slices in the bottom of a bowl, ladling the onion soup over the bread, and topping with grated cheese.
- Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
- Serve hot, garnished with fresh thyme or parsley if desired.
