Garlic Butter Turkey Meatballs and Lemon Zucchini Noodles

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1 medium zucchini spiralized
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley chopped (optional)

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Mix ground turkey, garlic, and butter in a bowl until just combined.
  3. Form mixture into meatballs, about 1 1/2 inches (3.8 cm) in diameter.
  4. Place meatballs on a baking sheet lined with parchment paper, leaving about 1 inch (2.5 cm) of space between each meatball.
  5. Bake for 18-20 minutes, or until cooked through and lightly browned on the outside.
  6. Spiralize zucchinis into noodle-like strands.
  7. Sauté zucchini noodles in a pan with a little bit of butter until tender, about 3-5 minutes.
  8. Add lemon juice to the pan with zucchini noodles and toss to combine.
  9. Serve garlic butter turkey meatballs on top of lemon zucchini noodles.
