Grilled Chicken Caesar Salad

  • 1 1 /2 pounds boneless skinless chicken breast
  • 1/2 cup olive oil
  • 2 cloves garlic minced
  • 2 anchovy fillets finely minced
  • 2 tablespoons freshly squeezed lemon juice
  • 1 egg yolk
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups romaine lettuce chopped
  • 1 cup homemade croutons
  • 1/2 loaf Italian bread cut into 1/2-inch cubes
  • 2 tablespoons olive oil

Method
 

Instructions
  1. Preheat grill to medium-high heat, approximately 400°F (200°C)
  2. Season the chicken with salt and pepper
  3. Grill the chicken for 5-6 minutes per side, until it reaches an internal temperature of 165°F (74°C)
  4. Let the chicken rest for 5 minutes before slicing
  5. Toss the romaine lettuce with Caesar dressing
  6. Slice the grilled chicken into thin strips
  7. Assemble the salad by placing the sliced chicken on top of the tossed lettuce
  8. Sprinkle parmesan cheese over the salad
  9. Serve immediately, garnished with croutons if desired
