Ground Beef Stroganoff

A hearty beef stroganoff dish with ground beef, mushrooms, and sour cream, served over egg noodles.

Ingredients

  • 1 lb ground beef
  • 2 cloves of garlic minced
  • 1 cup mushrooms sliced
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 2 tbsp Dijon mustard
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz sour cream
  • 1 cup cooked egg noodles
  • 1 cup chopped fresh parsley
  • 2 tbsp butter

Method
 

Instructions
  1. Preheat oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium-high heat, breaking it up into small pieces, until it is no longer pink, about 5-7 minutes.
  3. Add the mushrooms to the skillet and sauté until they release their moisture and start to brown, about 3-4 minutes.
  4. Stir in the beef broth, scraping the bottom of the skillet to release any browned bits.
  5. Bring the mixture to a simmer and cook until the liquid has reduced by half, about 2-3 minutes.
  6. Stir in the sour cream and cook for an additional 1-2 minutes, until the sauce has thickened slightly.
  7. Season with salt and pepper to taste.
  8. Serve the ground beef mixture over cooked noodles, garnished with chopped parsley or dill, if desired.
