Guinness Beef Stew

A hearty beef stew made with Guinness stout, beef broth, and root vegetables, cooked to tender perfection in the oven.

  • 2 lbs beef stew meat
  • 2 medium onions (chopped)
  • 3 cloves garlic (minced)
  • 2 medium carrots (peeled and chopped)
  • 2 medium potatoes (peeled and chopped)
  • 1 large celery stalk (chopped)
  • 1 cup Guinness stout
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp all-purpose flour
  • 2 tbsp butter

Method
 

Instructions
  1. Preheat oven to 300°F (150°C).
  2. Brown the beef in a large Dutch oven over medium-high heat, until golden brown on all sides, about 5 minutes.
  3. Add the onions to the pot and sauté until they are translucent, about 5 minutes.
  4. Add the Guinness stout to the pot, scraping up any browned bits from the bottom.
  5. Bring the mixture to a boil, then cover the pot and transfer it to the preheated oven.
  6. Bake for 2 1/2 hours, or until the beef is tender and the sauce has thickened.
  7. Season the stew with salt and pepper to taste.
  8. Serve hot, garnished with fresh herbs if desired.
