- Preheat oven to 300°F (150°C).
- Brown the beef in a large Dutch oven over medium-high heat, until golden brown on all sides, about 5 minutes.
- Add the onions to the pot and sauté until they are translucent, about 5 minutes.
- Add the Guinness stout to the pot, scraping up any browned bits from the bottom.
- Bring the mixture to a boil, then cover the pot and transfer it to the preheated oven.
- Bake for 2 1/2 hours, or until the beef is tender and the sauce has thickened.
- Season the stew with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
