Honey Glazed Carrots

Roasted carrots glazed with honey and seasoned with cumin, paprika, and parsley.

Ingredients
  

Main Ingredients
  • 4 large carrots peeled and chopped (500g)
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1/4 cup water (60ml)
  • 2 cloves garlic minced (6g)
  • 1/4 cup chopped fresh parsley (15g)

Method
 

Instructions
  1. Preheat oven to 425°F (220°C).
  2. Peel and slice the carrots into 1/4-inch thick rounds.
  3. Toss the carrot slices with oil, salt, and pepper on a baking sheet until they are evenly coated.
  4. Roast the carrots in the oven for 20 minutes, or until they start to soften.
  5. Glaze the carrots with honey, brushing them evenly.
  6. Continue roasting for an additional 10-15 minutes, or until the carrots are tender and caramelized, with a golden brown color.
  7. Remove the carrots from the oven and let them cool slightly.
  8. Serve the honey glazed carrots hot, garnished with fresh herbs if desired.
