Honey Roasted Carrots

A simple recipe for roasted carrots with a honey glaze.

Ingredients

  • 4 large carrots (1.5 lbs)
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)

Method
 

Instructions
  1. Preheat oven to 425°F (220°C).
  2. Peel and chop carrots into 1/2-inch thick slices.
  3. Toss carrot slices with honey until they are evenly coated.
  4. Spread carrots in a single layer on a baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, or until carrots are tender and caramelized, flipping them halfway through.
  6. Remove carrots from the oven and let them cool slightly.
  7. Season with salt to taste.
  8. Serve warm, garnished with fresh herbs if desired.
