- Preheat oven to 425°F (220°C).
- Peel the parsnips and cut them into 1-inch (2.5 cm) pieces.
- Toss the parsnip pieces with olive oil, salt, and pepper in a bowl until they are evenly coated.
- Spread the parsnip pieces out in a single layer on a baking sheet.
- Drizzle honey over the parsnip pieces.
- Roast in the preheated oven for 20-25 minutes, or until the parsnips are tender and caramelized, flipping them halfway through.
- Remove the parsnips from the oven and let them cool slightly on the baking sheet.
