Main Instructions
- **Heat** milk in a saucepan over medium-low heat until just hot (not boiling, about 170°F).
- **Whisk** in honey continuously for 1 minute until fully dissolved and mixture is smooth.
- **Stir** in vanilla extract (or scrape seeds from a vanilla bean), cinnamon, nutmeg, and granulated sugar (if using). Mix thoroughly until spices are evenly distributed.
- **Optional**: Add vodka or rum to the mixture and simmer for 30 seconds to infuse the alcohol.
- **Pour** immediately into serving mugs or over ice for a chilled version. Serve hot.
Notes
Note: Omit sugar if using sweetened milk. Adjust spices/honey to taste. Chill before serving or add ice for a colder version. Avoid boiling milk to prevent scorching. Adjust sweetness or spice levels to taste.
