  • 1 1 /2 pounds lamb chops
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1 cup fresh mint leaves
  • 1/2 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh mint leaves
  • 1/2 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Season lamb chops with salt and pepper.
  3. Sear lamb chops in a hot skillet with oil for 2-3 minutes per side, until browned.
  4. Transfer lamb chops to the preheated oven and bake for 15-20 minutes, until cooked to desired doneness.
  5. Chop fresh mint leaves.
  6. Mix chopped mint leaves with yogurt and lemon juice to create the mint sauce.
  7. Serve lamb chops with the mint sauce spooned over the top.
  8. Garnish with additional mint leaves, if desired.
