  • 1 1 /2 cups all-purpose flour
  • 1/4 cup confectioners' sugar
  • 1/2 cup unsalted butter softened
  • 1/4 cup granulated sugar
  • 1 tsp dried lavender buds
  • 1 tsp grated lemon zest
  • 1 tbsp freshly squeezed lemon juice
  • 1/4 tsp salt
  • 1 cup powdered sugar
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 tsp dried lavender buds

Method
 

Instructions
  1. Preheat oven to 300°F (150°C)
  2. Mix confectioners' sugar, granulated sugar, and salt in a bowl until well combined
  3. Add cold unsalted butter to the bowl and cream until the mixture resembles coarse crumbs
  4. Stir in dried lavender buds and lemon zest
  5. Combine all-purpose flour and mix until a dough forms
  6. Roll out the dough on a lightly floured surface to about 1/4 inch thickness
  7. Cut into desired shapes using a cookie cutter
  8. Place the cookies on a baking sheet lined with parchment paper, leaving about 1 inch of space between each cookie
  9. Bake for 18-20 minutes, or until the edges are lightly golden brown
  10. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
