  • 8 oz pasta
  • 1 cup fresh basil leaves
  • 1/2 cup fresh mint leaves
  • 1/2 cup pine nuts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic
  • 2 tbsp freshly squeezed lemon juice

Method
 

Instructions
  1. Preheat oven to 180°C (350°F) for potential future use, but first, focus on the stovetop.
  2. Bring a large pot of salted water to a boil.
  3. Add pasta to the boiling water and cook until al dente, about 8-10 minutes.
  4. Drain the pasta and set it aside.
  5. Combine lemon, basil, and mint in a food processor.
  6. Process the mixture until it's well combined and the herbs are finely chopped.
  7. Heat a saucepan over medium heat.
  8. Add the processed herb mixture to the saucepan and cook for about 2 minutes, stirring constantly, until fragrant.
  9. Toss the cooked pasta in the saucepan with the herb mixture until the pasta is well coated.
  10. Serve the pasta hot, garnished with additional basil and lemon if desired.
