Lemon Blueberry Scones

  • 2 1 /4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter cut into small pieces
  • 3/4 cup heavy cream
  • 1 large egg
  • 1 teaspoon grated lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 1 cup fresh or frozen blueberries

Method
 

Instructions
  1. Preheat oven to 400°F (200°C)
  2. Mix flour, sugar, and baking powder in a large bowl
  3. Add cold butter and use a pastry blender or fingers to work it into the dry ingredients until the mixture resembles coarse crumbs
  4. Stir in heavy cream until the dough starts to come together
  5. Gently fold in lemon zest and blueberries
  6. Turn the dough out onto a floured surface and gently knead it a few times until it comes together
  7. Pat the dough into a circle that is about 1 inch (2.5 cm) thick
  8. Cut the dough into wedges or use a biscuit cutter to create scones
  9. Place the scones on a baking sheet lined with parchment paper
  10. Bake for 18-20 minutes, or until the scones are golden brown
  11. Remove the scones from the oven and let them cool on a wire rack for 10-15 minutes
  12. Serve warm and enjoy
