Lemon Garlic Chicken Pasta

  • 12 oz (340g) pasta
  • 1 1 /2 lbs (680g) boneless skinless chicken breasts
  • 3 cloves garlic minced
  • 1/4 cup (60g) olive oil
  • 1 tsp (5g) dried basil
  • 1 tsp (5g) dried thyme
  • Salt and pepper to taste
  • 1 cup (250g) grated Parmesan cheese
  • 1 cup (240ml) chicken broth

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Season chicken with salt and pepper.
  3. Sear chicken in a pan with olive oil over medium-high heat until browned on both sides, about 5-6 minutes per side.
  4. Reduce heat to medium and add garlic to the pan, cooking for 1 minute until fragrant.
  5. Add lemon juice to the pan and stir to combine with garlic and chicken.
  6. Cook pasta according to package instructions until al dente.
  7. Toss cooked pasta with chicken, garlic, and lemon mixture.
  8. Bake in the preheated oven for 10-12 minutes, until chicken is cooked through and pasta is lightly browned.
  9. Garnish with parsley and serve hot.
