Lemon Herb Roasted Chicken

  • 1 whole chicken (1.5 kg)
  • 1/4 cup olive oil
  • 4 tbsp chopped fresh rosemary
  • 4 tbsp chopped fresh thyme
  • 2 tbsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika

Method
 

Instructions
  1. Preheat oven to 425°F (220°C).
  2. Rinse the chicken and pat it dry with paper towels.
  3. Season the chicken with salt and pepper.
  4. Zest the lemon and mix it with chopped herbs.
  5. Rub the lemon herb mixture all over the chicken.
  6. Place the chicken in a roasting pan and drizzle with olive oil.
  7. Roast the chicken in the preheated oven for 45-50 minutes, or until golden brown.
  8. Baste the chicken with pan juices every 20 minutes.
  9. Check the chicken for doneness, ensuring it reaches an internal temperature of 165°F (74°C).
  10. Let the chicken rest for 10-15 minutes before carving and serving.
