Lentils With Spinach

Ingredients

  • 1 cup brown or green lentils rinsed and drained
  • 2 cups water
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup fresh spinach leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • Salt and pepper to taste

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Rinse lentils and pick out any debris or stones.
  3. Saute onions and garlic in olive oil until softened, about 5 minutes.
  4. Add lentils to the pot and cook for 1-2 minutes, stirring constantly.
  5. Pour in water and bring to a boil.
  6. Reduce heat to low and simmer for 20-25 minutes, or until lentils are tender.
  7. Stir in chopped spinach and cook until wilted, about 1-2 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh herbs if desired.
