  • 1 1 /2 pounds boneless skinless chicken breasts
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 cup shredded mozzarella cheese
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp unsalted butter

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Season the chicken with salt and pepper.
  3. Sear the chicken in a hot skillet with oil until browned on both sides, about 5-6 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. Add more oil to the skillet if necessary, then saute the onions and garlic until softened, about 3-4 minutes.
  6. Add the chicken back to the skillet and pour in the chicken broth.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Remove the skillet from the oven and let it rest for 5 minutes before serving.
  9. Garnish with fresh herbs, if desired.
