- Preheat oven to 375°F (190°C).
- Season the chicken with salt and pepper.
- Sear the chicken in a hot skillet with oil until browned on both sides, about 5-6 minutes per side.
- Remove the chicken from the skillet and set aside.
- Add more oil to the skillet if necessary, then saute the onions and garlic until softened, about 3-4 minutes.
- Add the chicken back to the skillet and pour in the chicken broth.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove the skillet from the oven and let it rest for 5 minutes before serving.
- Garnish with fresh herbs, if desired.
