  • 1 (15 ounce) can chickpeas drained and rinsed
  • 1/2 cup chopped cucumber
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Method
 

Instructions
  1. Drain and rinse the chickpeas, then place them in a large bowl.
  2. Chop the ingredients into bite-sized pieces, if they were provided.
  3. Mix all the ingredients together in the bowl until well combined.
  4. Season with salt and pepper to taste, if salt and pepper were available.
  5. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  6. Serve the Mediterranean Chickpea Salad cold, garnished with any available ingredients.
