Mini Spinach Quiches

A delicious and easy-to-make quiche recipe perfect for breakfast or brunch.

  • 1 1 /2 cups all-purpose flour
  • 1/2 cup cold unsalted butter cut into small pieces
  • 1/2 cup ice-cold water
  • 1/2 cup grated cheddar cheese
  • 1/2 cup grated mozzarella cheese
  • 1/4 cup chopped fresh spinach
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried thyme

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Mix eggs, salt, and pepper in a bowl until well combined.
  3. Add shredded cheese and chopped spinach to the bowl, stirring until the spinach is evenly distributed.
  4. Pour the egg mixture into pre-made mini quiche crusts.
  5. Bake for 15-20 minutes, or until the edges are golden brown and the centers are set.
  6. Remove the quiches from the oven and let them cool for 5 minutes.
  7. Serve the mini quiches warm, garnished with chopped fresh herbs if desired.
