  • 1 1 /2 cups all-purpose flour
  • 3 1 /2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1 large egg
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 1 cup mixed berries (such as blueberries strawberries, raspberries)
  • 10 -12 wooden skewers
  • Confectioners ' sugar for dusting
  • Fresh berries for garnish

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. Mix together flour, sugar, and baking powder in a large bowl until well combined.
  3. Whisk in milk, egg, and melted butter until smooth.
  4. Gently fold in blueberries and raspberries.
  5. Drop batter by 1/4 cupfuls onto a parchment-lined baking sheet.
  6. Bake for 10-12 minutes, or until golden brown.
  7. Allow pancakes to cool completely on a wire rack.
  8. Thread cooled pancakes, blueberries, and raspberries onto skewers.
  9. Serve immediately, or refrigerate for up to 2 hours before serving.
  10. Garnish with additional berries, if desired.
