  • 3 large ripe bananas mashed (1 1/2 cups)
  • 1 1 /2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/2 cup chopped walnuts (optional)

Method
 

Instructions
  1. Preheat oven to 350°F (180°C).
  2. Mash bananas in a large bowl until they're smooth.
  3. Whisk together flour, sugar, and baking powder in a separate bowl.
  4. Combine the dry ingredients with the mashed bananas.
  5. Add eggs one at a time, mixing well after each addition.
  6. Mix in any additional ingredients, if using, until just combined.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the bread from the oven and let it cool in the pan for 10 minutes.
  10. Transfer the bread to a wire rack to cool completely.
