  • 2 large eggs
  • 1 1 /2 cups all-purpose flour
  • 1 cup granulated sugar
  • 6 ounces best-quality bittersweet or dark chocolate broken into small pieces
  • 1/2 cup unsalted butter at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt

Method
 

Instructions
  1. Preheat oven to 425°F (220°C).
  2. Melt chocolate in a double boiler or in the microwave in 30-second increments, stirring between each interval, until smooth.
  3. Whisk together flour, sugar, and eggs in a medium bowl until well combined.
  4. Add melted chocolate to the bowl and whisk until the batter is smooth.
  5. Pour the batter into 4 (6-ounce) ramekins or small cups.
  6. Place the ramekins on a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes, or until the edges are set and the centers are still slightly jiggly.
  8. Remove from the oven and let cool in the ramekins for 1 minute.
  9. Invert onto plates and serve immediately, with the molten chocolate center flowing out.
