Molten Chocolate Lava Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 6 ounces best-quality bittersweet or dark chocolate broken into small pieces
  • 1/2 cup unsalted butter at room temperature
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon salt

Method
 

Instructions
  1. Preheat oven to 425°F (220°C).
  2. Butter six 6-ounce ramekins and dust them with sugar.
  3. Melt chocolate in a double boiler or in the microwave in 30-second increments, stirring between each interval, until smooth.
  4. Whisk together eggs and sugar until pale and thick, about 2-3 minutes.
  5. Whisk in flour and salt until just combined.
  6. Pour in melted chocolate and whisk until smooth.
  7. Divide batter evenly among prepared ramekins.
  8. Bake for 12-15 minutes, or until edges are set and centers are still slightly jiggly.
  9. Remove from oven and let cool in ramekins for 1 minute.
  10. Invert onto plates and serve immediately, with centers still molten and warm.
