Ingredients
  

Main Ingredients
  • 1 lb boneless skinless chicken breast, cut into 1-inch pieces
  • 2 cups mixed vegetables (carrots potatoes, peas)
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Sauté the ingredients in a pot over medium-high heat for 5 minutes, until they start to brown.
  3. Add liquid to the pot and bring to a boil.
  4. Reduce heat to low and let simmer for 20-25 minutes, until the ingredients are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh herbs if desired.
