Pesto Zucchini Noodles

A healthy and flavorful dish made with zucchini noodles and pesto sauce.

  • 2 cups zucchini
  • 1/2 cup fresh basil leaves
  • 1/3 cup pine nuts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic
  • 1/4 tsp black pepper

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Slice zucchinis into noodle-like strands.
  3. Sauté the sliced zucchinis in a pan with a little oil for 3-4 minutes, until they start to soften.
  4. Add pesto to the pan and toss to combine with the zucchinis.
  5. Cook for an additional 2 minutes, until the zucchinis are tender but still crisp.
  6. Season with salt to taste.
  7. Serve hot, garnished with additional pesto if desired.
