Ridiculously Easy Almond Croissants

  • 1 1 /2 cups all-purpose flour
  • 1/4 cup confectioners' sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon instant yeast
  • 1/2 cup unsalted butter softened
  • 1/2 cup almond paste
  • 1 large egg
  • 1 tablespoon whole milk
  • 1/2 teaspoon pure almond extract
  • 1/4 teaspoon granulated sugar
  • 1/2 cup sliced almonds

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Mix almond flour, confectioners' sugar, and salt until well combined.
  3. Add unsalted butter and mix until the mixture resembles coarse crumbs.
  4. Roll out the mixture into a large rectangle, about 1/4-inch thick.
  5. Fold the rectangle in half lengthwise, like a letter.
  6. Rotate the dough 90 degrees, so the folded edge is facing you.
  7. Roll out the dough again into a large rectangle, about 1/4-inch thick.
  8. Cut into long, thin triangles.
  9. Roll each triangle into a croissant shape, curving the dough into a crescent.
  10. Place the croissants on a baking sheet lined with parchment paper, leaving about 1 inch of space between each.
  11. Brush the tops with egg wash (beaten egg mixed with a little water).
  12. Bake for 15-20 minutes, or until golden brown.
  13. Allow the croissants to cool on a wire rack for 10-15 minutes before serving.
