- Preheat oven to 425°F (220°C).
- Rinse cauliflower and remove leaves and stem, then cut into 1-inch thick steaks.
- Toss cauliflower steaks with olive oil, minced garlic, sea salt, and lime zest until they are evenly coated.
- Arrange cauliflower steaks in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until tender and caramelized, flipping halfway through.
- Squeeze fresh lime juice over the roasted cauliflower steaks.
- Season with additional sea salt to taste, if needed.
- Serve hot, garnished with lime wedges and chopped fresh herbs, if desired.
