Roasted Cauliflower Steaks with Garlic, Sea Salt and Lime

Main Ingredients
  • 2 heads of cauliflower (1.5 kg)
  • 4 cloves of garlic peeled and minced (15g)
  • 2 tbsp olive oil (30ml)
  • 2 tsp sea salt (10g)
  • 1 tsp black pepper (5g)
  • 1/4 cup chopped fresh parsley (15g)
  • 1/4 cup grated Parmesan cheese (30g)

Method
 

Instructions
  1. Preheat oven to 425°F (220°C).
  2. Rinse cauliflower and remove leaves and stem, then cut into 1-inch thick steaks.
  3. Toss cauliflower steaks with olive oil, minced garlic, sea salt, and lime zest until they are evenly coated.
  4. Arrange cauliflower steaks in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 20-25 minutes, or until tender and caramelized, flipping halfway through.
  6. Squeeze fresh lime juice over the roasted cauliflower steaks.
  7. Season with additional sea salt to taste, if needed.
  8. Serve hot, garnished with lime wedges and chopped fresh herbs, if desired.
